Heat milk in saucepan over low heat until it begins to boil, temperature should be 110C. Use a thermometer to test the temperature.
Remove from heat and allow to cool. Temperature should cool to between 25 and 30C. If necessary use a thermometer.
Add 2 tablespoons yogurt, stir well.
Transfer the yogurt mixture to a new, clean clay pot and cover the pot with plastic wrap and a thick blanket. (If weather is too cool).
Place outside overnight or for 10- 12 hours. (At this point, the curd will be done.

For oven prep, preheat the oven to 110-115 F and then turn it off but turn on oven light. Place curd mixture in oven on upper rack. Close the door and leave it there. Curd will be done in 4-6 hours.
